Why Vegan?

In 2005 I discovered I had Hodgkins. I had a tumor the size of a grapefruit wrapped around the main arteries of my heart. After extensive chemotherapy and radiation treatments, I was cured!

Or so I thought.......

About 2008, I was having difficulty breathing, it was discovered I had extensive damage to my arteries, after several attempts at stents, it was determined in 2009, I would have to have a triple-by-pass to open my arteries. While in the hospital waiting for my surgery, my surgeon suggested I read a book, "Prevent and Reverse Heart Disease" by Dr. Caldwell Esselstyn, a book that changed my life.

On the road to recovery, I discovered a new world of cooking, plant-based (Vegan). I no longer ate meat, dairy or eggs, nothing that came from an animal. I started offering cooking demonstrations, cooking classes, catering events and pop-up dinners. I kept getting asked, "When are you going to open a restaurant?" I didn't think I wanted a 24/7 commitment, when a friend called me and told me about a food truck that was for sale. I thought this is the perfect solution! So, in 2018 "Vegan A Go-Go" was "born". (Even though the truck was a taco truck, it was originally purchased in St Louis as a Vegan Food Truck!) It was truly "'meant to be".

I really enjoy creating food that not only is Vegan, but yummy too!
